And remember how a few weeks back we had that snowpocalypse in the South, so we decided to warm up with some chipotle chicken and corn chowder? Well, snowpocalypse continues! And this time, with even more snow!
Sooo, the polar vortex (awesome superhero/wrestler name alert) came around and completely immobilized the South, leaving us with whopping 2 inches of snow. And I know, I know most northerners are probably falling out of their chairs laughing at us right now, but just to clarify, the snow is not the problem. It’s the immediate freeze that followed, leaving a solid sheet of ice on all our roads. And lemme tell you, driving on that is NOT fun! It took me 6 hours to travel 10 miles on Tuesday afternoon…and my heart stopped like 5 times while my poor little Peeley (my car) fishtailed left and right down icy roads.
I have been sitting here for at least 45 minutes trying to figure out how to start off this post. I tried “Hello, stranger!”, “Howdy”, “I am back!”, and my favorite “Holy boxes!” but none of those really work in this situation. I am just too exhausted to really find that perfect greeting. So I think a basic “hi” will work in this case. Hi!

I fist came upon this lovely recipe while scrolling though Pinterest over a year ago now. It spent a good bit of time in one of my personal Pinterest boards, sitting and patiently waiting for its time to shine. But, it wasn’t until the significant other happened to glance at my computer screen one evening and the gorgeous picture of the pin (as it was pinned from the original blog post) stopped him in his tracks as he was travelling towards the man cave. This should tell you A LOT if you live with a guy that has a man cave…especially if he stopped over anything that comes from Pinterest!?
It is then I knew that this beautiful recipe’s time has come to get the full 2girlsandapin treatment. I gave the recipe a read, and it sounded a little intimidating! But, as I kept reading on, the blog post that follows this recipe came with such a sweet story, that it almost eased my mind towards finally giving it a shot…so, here we are!
