Ok, I don’t know how many of you go through this, but certain fruits and vegetables become the “it girl (or boy)” in my kitchen. I go through these phases where everything I cook has some variation of asparagus, or yellow squash, or green chilies…and recently, I’ve noticed I’ve been gravitating towards avocados. Now, it’s too early to tell whether the lovely green superfood is on its way to the status symbol of a staple vegetable in my kitchen (like that of the reigning champions mushrooms and garlic), but it has definitely been on my mind. So, as I was Pinteresting away one lazy afternoon I came across this avocado tomato salad from She’s Vegging Out. It looked simple and light…enough to give it a try!
